Carnot is the most traditional herbal spirit in Dénia of all time and it became highly popular in the town during the mid-20th century.

Carnot was consumed mixed with seltzer or soda water. Today, it is also served combined with regular or pink tonic water, the latter giving it a distinctive, modern orange hue. Carnot also combines with soft drinks. So when it comes to choosing how to drink it, the question remains: do you prefer the traditional style (classicot) or the contemporary version (modernot)?
